Classic Lace Cookies
- 2 oz. blanched almonds or walnuts (yields 1/2 cup ground)
- 5 Tbs. unsalted butter
- 1/3 cup sugar
- 2 Tbs. light corn syrup
- 1/3 cup all purpose flour
- Pinch of salt
- 1 tsp. vanilla extract
- Preheat oven to 350 degrees. Line two baking sheets with nonstick liners (parchment paper) etc. something to make the cookies not stick
- Grind almonds (walnuts) with food processor
- Heat butter, sugar, and corn syrup in a medium saucepan over low heat, stirring often until butter melts and sugar dissolves.
- Remove pot from heat and stir in flour and salt until incoporated. Stir in ground almonds (walnuts) and vanilla extract.
- Drop batter by teaspoonful 3 inches apart on baking sheets (6 per sheet). Bake until light brown (~10 mins.). Transfer to wire rack to cool.
- Shape cookies however you want.
